Red red is the dish that visitors to Ghana come home and start cooking themselves. It’s a sustaining bean stew accompanied with plantains. Black-eyed beans are cooked in a sauce of onions, tomatoes, fiery chilli, ginger and garlic, all ground to a smooth paste and fried in the commonly-used bright red palm oil. The plantains are also fried in the red oil until they are sweet and giving. Red beans with red plantains… or red red. Asanka Local is a traditional chop bar and serves a superlative example of red red, best piled next to a fried fish.
